Yaki udon (焼きうどん) are a particular type of Japanese wheat noodles sautéed and seasoned with a slightly sweet soy sauce-based sauce.
The version I propose is vegan. If you prefer you can add shrimp or bacon.
1/4 bok choy or white cabbage
1 onion cut into large slices
1 spring onion cut into large pieces (only the green part)
Otafuku brand yaki soba sauce
sesame seeds to taste
Heat the oil in a pan and fry the onion.
Add cabbage, carrot and spring onion. Cook until the vegetables are cooked through but still a little crunchy.
Add the udon and half a cup of water, stir to divide them.
Pour plenty of yaki soba sauce, mix and sauté until everything is well combined. Garnish with sesame seeds.
