Yaki udon

Yaki udon (焼きうどん) are a particular type of Japanese wheat noodles sautéed and seasoned with a slightly sweet soy sauce-based sauce.

The version I propose is vegan. If you prefer you can add shrimp or bacon.

  • pre-cooked udon

  • vegetable oil

  • 1 carrot

  • 1/4 bok choy or white cabbage

  • 1 onion cut into large slices

  • 1 spring onion cut into large pieces (only the green part)

  • Otafuku brand yaki soba sauce

  • sesame seeds to taste

  • Heat the oil in a pan and fry the onion.

  • Add cabbage, carrot and spring onion. Cook until the vegetables are cooked through but still a little crunchy.

  • Add the udon and half a cup of water, stir to divide them.

  • Pour plenty of yaki soba sauce, mix and sauté until everything is well combined. Garnish with sesame seeds.
