Mapo tofu
Mapo tofu (麻 婆 豆腐, literally "pockmarked old woman's soy cheese") is a Chinese dish typical of Sichuan. Like many other dishes from this region, mapo tofu is spicy and has a rich and complex aromatic range.
It is also known and appreciated in Japan, as it was introduced to the Rising Sun by chef Chen Kenmin: his son, Chen Kenichi, popularized this dish through his TV shows.
It is no coincidence, in fact, that fans of Midnight diner (Yaro Abe) have found mapo tofu in the third volume of the Italian edition published by Bao Publishing.
